The move was announced by the team during the players' day off Tuesday afternoon. The Bills return to practice Wednesday to prepare for their season opener at New England on Monday.
The Bills also re-signed offensive lineman Kirk Chambers, who was among the team's final cuts last weekend.
A seven-year veteran, Walker was a two-year starter after signing with Buffalo in free agency in March 2007.
On Friday, the Bills fired offensive coordinator Turk Schonert after the first-team offense scored only 3 points in 15 possessions in the preseason.

Oddsmakers from online sports book Sports Interaction have made the Bills 50/1 long shots to win Super Bowl XLIV and 25/1 to win the AFC Championship.
